1 head of cauliflower
1/2 cup unsweetened almond or coconut milk
1 teaspoon coconut oil
2 tablespoons light sour cream
1/4 teaspoon garlic salt
Freshly ground black pepper
Chives, thinly chopped
Optional: 1 tablespoon of Kerrygold Grass Fed Butter
- Steam cauliflower for 12–15 minutes or until very tender.
- Drain and dry cauliflower, and transfer to large bowl.
- Add the milk, oil, sour cream, salt and pepper, then mash until smooth.
- Top with chives.
