If you ever need a pick-me-up on a cold, rainy, possibly snowy day, I have just the trick!

Hot Chocolate Truffles are the answer. They just usually aren’t the answer if you want something healthy. Well now, you can have your truffle and eat it too!

See below the recipe from Swerve of the greatest little truffle treat of all time!

Ingredients
  • 1 cup heavy cream
  • 1/4 cup butter
  • 4 ounces unsweetened chocolate, chopped
  • 1/2 cup Swerve, Confectioners
  • 1 tsp vanilla extract OR peppermint extract  
  • 3 to 4 tbsp cocoa powder
  • Crushed sugar-free peppermint candies (optional)
Instructions
  1. In a medium saucepan over medium heat, bring the cream to a simmer. Remove from heat and add the butter and chopped chocolate. Let sit 5 minutes to melt.
  2. Add the Swerve and extract and whisk until the mixture is smooth. Refrigerate 2 to 3 hours to firm up.
  3. Using your hands, roll the mixture into 1 inch balls (prepare to get those hands dirty…this is a messy business!). If your mixture is crumbly, simply warm it between your palms before rolling into a ball.
  4. Roll the balls in cocoa powder or crushed peppermint candies. Eat as is or turn into hot chocolate!
  5. To use for hot chocolate, simply heat some almond milk or whole milk. Add two truffles and stir until melted.

Makes about 30 truffles. 2 truffles per serving.

I’m gonna share with you one of my favorite guiltless cookie recipes! One of the things I love about Keto Snaps is that they are meant to be just one part of a greater dessert. They are delicious on their own, but when added to things such as healthy ice cream or peanut butter, it can make it a flavor blast for your tastebuds!

Cacao Peanut Butter Snaps’wiches

Ingredients:

-10 cacao Keto-Snaps

-57 grams (⅓ cup) peanut butter chips

Preparation:

1. Place baking chips in microwavable safe bowl. Place in microwave for 20-30 seconds or until melted. You can also melt chips on stove top.

2. Spread approximately 1 Tbsp melted peanut butter chips onto the bottom of one cookie and sandwich with another.

3. Place sandwiched Keto-Snaps on a plate and place in fridge for 10 minutes to allow PB spread to set.

Now you might think it’s crazy that I consider yogurt a treat, but you won’t after you read this!

Peak Yogurt’s triple cream product has 17% milkfat, which is the best part of dairy! It’s silky, creamy, and delicious.

When I want to have a little treat, I try to think of the best options I have without completely ruining my diet.

Peak is always trying new ways to get creative with their product and I came across this delicious chia seed pudding topped with the yogurt as a topping!

One of my favorite treats to eat is my vanilla chia seed pudding, so look below for the recipe to that and if you want to take it the extra mile, grab some strawberry Peak Yogurt, you won’t even believe it’s healthy because your brain will think it’s a dessert!

VANILLA CHIA SEED PUDDING

Serving(s): 1

INGREDIENTS

●  1⁄2 cup chia seeds

●  11⁄2 cups hot water

●  14 ounces full-fat canned coconut milk

●  1⁄3 cup Cruise Control friendly sweetener (Swerve)

DIRECTIONS

1.Mix hot water and chia seeds

2.Add all ingredients together and mix with a spoon.

3.Separate equally into cup or bowl of your choice and refrigerate up to one hour or overnight

If you have a little time this weekend, save this post, this is a dessert you can have during your fasting window!

One of my favorite sections in my new book, The Cruise Control Diet, are foods that you can eat during your fasting window. Yes, you read that right, during your fasting window!

This peppermint patty from the new book is something that does just that. It’s made so you can indulge without breaking your fast because it omits sugar and protein. This is the perfect recipe you can use and make and have in a big batch and have in your fridge whenever you feel the urge for a sweet treat during your fasting window.

Recipe:

INGREDIENTS:

10 tablespoon of coconut oil

1 tablespoon @swervesweetie

1 teaspoon of peppermint extract

2 tablespoons of unsweetened cocoa powder

DIRECTIONS:

1.Mix the melted coconut oil with @swervesweetie and peppermint extract.

2.Pour half of the mixture into ice cube trays. Place in the fridge. This will become the white layer.

3.Add cocoa powder to the remaining mixture, then pour onto the white layer.

4.Place back into the refrigerator until set completely then freeze for 2-3

hours.

My favorite part of this recipe is using Swerve sweetener. It is truly the ultimate sugar replacement. Who would have known that while you’re fasting you can have a treat.. And not gain weight!? Swerve makes this treat possible because it gives your tastebuds the sensation that you’re eating a treat, but your mind doesn’t feel bad about it because it’s good for you!

Valentine’s Day is such a great time of the year because it just reminds us to love more!

What I don’t love, is muffin tops, or the bit of fat I have left to lose on my stomach. But holidays just bring out the sweet in me! I feel like it’s an occasion to treat yourself and your loved ones.

Luckily, because of Swerve we don’t have to choose between one or the other!

See below a delicious gluten-free sugar cookie recipe that I made for my boys this year! We all ate 3 cookies each and didn’t feel guilty about it at all!

Ingredients

Cookies

  • 1 3/4 cup of almond flour
  • 1/4 cup of coconut flour
  • 1/2 tsp of salt
  • 1 tsp baking powder
  • 1/4 cup unsalted butter (room temperature)
  • 1/2 cup Swerve, Granular
  • 2 large eggs
  • 1/2 tsp of vanilla
  • 1 TBS milk

Icing

Instructions

For the Cookies

  1. Pre-heat oven to 325.
  2. In a medium bowl, combine almond flour, coconut flour, salt and baking powder, and set aside.
  3. In a large bowl, cream butter and Swerve until well combined, scarping the side of the mixer bowl as necessary. Add eggs and vanilla and beat until light and fluffy. Add dry ingredients and 1 tablespoon of milk and mix until combined.
  4. Make two balls of dough and wrap in plastic wrap. Place in refrigerator for at least two hours to chill.
  5. Roll out on parchment paper or lightly floured counter top to about 1/4 to 1/2 inch thickness, and cut out with cookie cutters.
  6. Place on greased cookie sheets and bake at 325 for 8-10 minutes until cookie edges are a bit golden.
  7. Let cool on cookie sheet, and keep them uncovered for about an hour or two before icing.

For the Icing

  1. Cream butter until light and fluffy. Add Swerve, Confectioners and mix on high for 5 minutes. Add milk and vanilla and mix for another 5 minutes. Add 18-20 drops of natural food coloring to icing, and mix until desired color is reached.
  2. Ice cookies and enjoy!

Makes about 3 dozen servings.

As I told you guys, I have a sweet-tooth and I’m not lying! I’m going through the same struggles day-to-day that you may be. One of my favorite ways to combat this is with Swerve, the ultimate sugar replacement.

Swerve makes healthy eating delicious on another level! One of my favorite recipes to make for my kids over the weekend when we are all feeling something sweet are the Avocado Brownies. I mean you already know how much I love avocados, just look at the benefits:

-High fat: very satiating if you need a small snack and don’t want to overeat. It even helps to absorb nutrients from plant foods.

-Full of Vitamins such as: Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, Vitamin B6, Vitamin E, and even contains small amounts of magnesium (to help with sleep), and iron (beneficial for women)

-They contain more potassium than bananas and your body needs potassium and usually doesn’t get enough!

-They are full of fiber. The soluble fiber is known for feeding the gut bacteria in your intestine which is very important for optimal body function

-They can lower your cholesterol levels

-They are loaded with powerful antioxidants

-They may help relieve symptoms of arthritis, prevent cancer, and even promote weight loss

Now imagine all these benefits, in a brownie! I know, I can’t believe it’s real either! See the recipe below and try it for yourself!

Recipe:

Ingredients
  • 1 cup Swerve, Granular
  • 1 cup almond flour
  • ½ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 oz melted unsweetened chocolate
  • 3 TBS milk
  • 2 medium slightly ripe avocados
  • ¼ cup sour cream, room temperature  
  • 3 TBS butter, room temperature
  • 1 TBS vanilla extract
Instructions
  1. Preheat oven to 350, and line 11x 7 baking dish with parchment paper. Set aside.
  2. In a separate bowl, combine the dry ingredients (Swerve, almond flour, cocoa powder, baking powder, salt) and whisk together.  Set aside.
  3. In a microwave or double boiler melt unsweetened chocolate and milk together. Whisk until combined. If you are using a microwave, melt chocolate and milk on 10 second intervals- stirring in between each interval. Set aside or remove from burner.
  4. Cut avocados in half- remove pit, and spoon avocado out of shell. Place in a food processor, and process until smooth.
  5. Add each of the wet ingredients (melted chocolate, sour cream, butter, vanilla) one at a time to the smooth avocado mixture, and process for a few seconds until all of the wet ingredients have been added to the food processor and are combined.
  6. Add dry ingredients to the wet avocado mixture and mix until combined.
  7. Pour or spoon batter into parchment paper lined baking dish.
  8. Place in oven and bake for 35 minutes.
  9. Let cool and slice into serving size of choice – normally makes 12 to 16 brownies.

Note: If your avocados are too ripe, the brownies will taste too earthy. They should still be firm.

Makes 12-16 servings
